So we had this coconut (a real one) and I googled around for coconut recipes that sounded good. I made these.

As per the review at the bottom, I baked them at 350 degrees instead of 400. Also, the recipe doesn’t tell you where the toasted coconut actually goes, so I mixed it into the batter and sprinkled some onto the tops, pressing them into the batter lightly to prevent them from burning.

They’re not that great. Too much orange. But I mean I guess I was kind of expecting the taste of a coconut cake when these are muffins. So I guess they’re not that bad either. They’re adequate.
